Zucchini mit Kichererbsen, Feta und Rucola

Zucchini-Nudeln, Zucchini-Spaghetti, Zucchini. Wie auch immer du es nennst, ich liebe es absolut. Ich mache ungefähr einmal pro Woche Zucchini und dann ziehe ich es vor, sie ein bisschen zu variieren. Früher habe ich natürlich 10 leckere Zucchini-Rezepte gezeigt, mit denen man sich inspirieren lassen kann. Eines dieser Rezepte von In My Red Kitchen hat mich wirklich angesprochen und war kürzlich auf unserem Tisch: Zucchini mit knusprigen Kichererbsen, Feta und Rucola.

Das Tolle an diesem Rezept ist, dass es unglaublich einfach ist. eine sehr entscheidende Bedingung, wenn es auf meinem Esstisch erscheinen will. Sie sind in 25 Minuten fertig und können in der Zwischenzeit etwas anderes tun. Zuerst bereiten Sie die Kichererbsen vor; Sie gehen für 20 Minuten in den Ofen. Dann können Sie mit den Zucchini und möglicherweise dem Pesto arbeiten und haben dann noch etwa 10 Minuten Zeit, um andere Dinge zu tun. Ideal.

Die Kombination mit Kichererbsen, Feta und Rucola ist himmlisch. Sie können auch geröstete Pinienkerne darüber streuen. Mein Gefühl sagt, dass es auch sehr gut kombiniert. Sogar der BF, der Zucchini nicht so mag wie ich, fand, dass dies ein sehr leckeres Gericht war, das seiner Meinung nach öfter serviert werden könnte. Gesund, voller Gemüse und auch gut, wenn Sie weniger Kohlenhydrate essen möchten.

Zutaten & Materialien

Spiralschneider oder Mandoline

Backblech mit Backpapier

Sieb

Zutaten

2 Zucchini

50 Gramm Feta

400 Gramm Kichererbsen

4 volle Hände Rucola

1 Teelöffel Kreuzkümmelpulver

1 Teelöffel Paprika

1 Prise Salz und Pfeffer

1 Schuss Olivenöl

2 Esslöffel grünes Pesto optional

Vorbereitungsmethode

Spülen Sie die Kichererbsen in einem Sieb unter dem Wasserhahn. Pat sie trocken und mischen Sie dann mit einem Esslöffel Olivenöl und dem Kreuzkümmelpulver, Paprika und Salz und Pfeffer.

Decken Sie ein Backblech mit Pergamentpapier ab und verteilen Sie die Kichererbsen darauf. 20 Minuten knusprig backen.

Waschen Sie die Zucchini gut und machen Sie dann mit einem Spiralizer Fäden aus den beiden Zucchini.

In der Pfanne etwas Olivenöl erhitzen und die Zucchini kurz anbraten; ein paar Minuten sind genug. Jetzt können Sie optional etwas Pesto hinzufügen, wie dieses hausgemachte Pesto.

Die Zucchini auf zwei Teller verteilen. Teilen Sie den Rucola darum und zerbröckeln Sie den Feta über den Zucchini. Zum Schluss die warmen, knusprigen Kichererbsen hinzufügen
